Take note of what you'll need:

- 400g of cleaned mussels
- ½ an onion
- 2 tbsp of green curry paste
- 300g of coconut milk
- 3 sprigs of chopped coriander
- The juice of 1 lime
- 1 sliced green chili
- Salt

You could enjoy 0% TGC while you cook this easy recipe. To begin with, chop half an onion into small pieces. If you get weepy, take the opportunity to dramatize the moment and act out an epic movie ending. Put the pan over medium-high heat with a dash of EVOO and sauté the onion. When it starts getting soft, add the coconut milk, the green curry paste, and the Kaffir lime leaves and, to conclude, the star: the mussels. You will have to cook everything until the mussels begin to open. When this happens, take them out, serve them on a plate and add coriander, green chili, lime juice and salt.
